Tomato, Peach and Feta Salad
3 fresh peaches, seeded and cut into wedges
3 fresh tomatoes, cut into similar wedges
1/4 cup pickled red onion
1 cup of crumbled, mild and rich feta (or a couple of mozzarella balls, ripped apart)
1/2 cup of drained and seeded castelvetrano olives

1 tbsp honey
2 tbsp pickled red onion brine 
1/2 cup olive oil
Salt to taste 

Arrange the fruit and vegetables on a platter. Top with cheese, pickled onions and olives. Pour over the dressing.
